About the event
With over 14 years of experience, we want to share our skills and knowledge with you on how to process your own homegrown meat! We recognize the need to reclaim this lost art that we had to learn on our own, without much help. Let us spare you the mistakes that we experienced, having to figure it out the hard way. We will teach you how to process a hog from start to finish, using only basic and low cost equipment. We will cover safe handling, dispatching the animal, “sticking”, scalding and scraping, gutting, disassembling the carcass, and packaging. We will identify cuts and further processing, how to identify & use by-products, rendering the lard, making cracklings, and generally enabling you to take control of your food supply!
Each participant will leave with the knowledge to process your own hog, and a box of Holt Family Farms USDA Pork Products (not the meat we will be processing).

There are 2 sessions-morning (6-11AM) and afternoon (12-5PM). When you purchase your ticket please make sure you are choose the correct session that you would like to attend. Due to the hands-on nature of this class, you will not be able to stay for both sessions. A free lunch will be provided for all participants from 11-12. Children are welcome, but must be supervised at all times. For food safety purposes the temperature has to be below 40º F so if we encounter an unseasonably warm day, we will have a reschedule day for January 13th. Please dress accordingly.
